Cooking Tips and Notes
Mastering the Air Fryer for Crispy Wings
Creating Greek Air Fryer Wings is a delightful journey, and mastering your air fryer can make all the difference in achieving that perfect crispiness. Start by ensuring your air fryer is preheated; this helps cook the wings evenly and locks in flavor.
-
Coat Wisely: For ultra-crispy wings, pat them dry before seasoning. A sprinkle of baking powder along with your seasonings can also aid in achieving that coveted crunch, so don’t shy away from trying it!
-
Don’t Overcrowd: Once marinated, arrange your wings in a single layer. Overcrowding can lead to uneven cooking, resulting in soggy spots that no one desires.
-
Shake It Up: Halfway through the cooking time, give your wings a gentle shake or flip. This ensures that all sides get that golden brown exterior we crave.
-
Temperature Matters: Cooking at a higher temperature, say around 400°F, can really promote that crispy finish. Keep an eye on them to avoid overcooking—nobody enjoys dry wings.
-
Let Them Rest: After cooking, allow the wings to rest for a few minutes. This keeps them juicy and lets the flavors meld beautifully.
By following these tips, you’ll elevate your Greek Air Fryer Wings to new heights of deliciousness, perfect for any gathering or quiet night in. Enjoy making your wings a culinary sensation!

How do I ensure my wings are crispy?
To achieve that perfect crispy exterior, start by patting the wings dry with paper towels before seasoning. Removing excess moisture is key! Don’t forget to shake the basket halfway through cooking for even crispiness.

While these wings are bursting with flavor on their own, a tangy tzatziki sauce makes an excellent pairing! Greek Lemon Chicken Wings
- Total Time: 4 hours 35 minutes
- Yield: 4 servings 1x
- Diet: Gluten-Free
Description
Delicious Greek-style chicken wings marinated in a fresh lemon blend and cooked to crispy perfection in the air fryer.
Ingredients
- 1 T freshly-grated lemon zest (optional, but recommended)
- 1 T fresh-squeezed lemon juice (or more if you really like lemon)
- 1/4 cup extra-virgin olive oil
- 1 tsp. minced garlic (or more)
- 1 tsp. salt (more or less to taste)
- 1 tsp. dried oregano
- 1 pound trimmed raw chicken wings (see notes)
Instructions
- Trim the wings if needed. (We didn’t need to do much trimming for the Kirkland Party Wings we used, but some grocery store wings will need to have excess skin and fat trimmed.)
- Zest the skin from a lemon and then squeeze the juice. (Or you can use fresh-frozen lemon juice and skip the zest if you don’t want to buy a lemon.)
- Whisk together lemon zest (if using), lemon juice, olive oil, garlic, oregano, salt, and pepper to make the marinade.
- Put the wings and marinade in a large Ziploc bag or plastic container with a snap-tight lid, and let them marinate in the fridge for a minimum of four hours, or marinating them overnight or for eight hours or longer will give more flavor.
- When you’re ready to cook, drain the wings into a colander place in the sink and discard the marinade. (If you don’t want the oily marinade to go down your sink, catch it in a bowl and discard.)
- Let wings come to room temperature while you preheat Air Fryer to 400F/205C. (Preheat without the rack in the Air Fryer if you are going to use Air Fryer Parchment Paper, which I recommend.)
- Line Air Fryer rack with Air Fryer Parchment Paper if using. Try to arrange wings in the Air Fryer basket so they are not touching each other. (I was able to fit 18 wing pieces in my Cuisinart Air Fryer, but if you have a smaller Air Fryer you may need to cook in two batches.)
- Cook wings 8 minutes, or until they are golden-brown on the first side. (Some Air Fryers cook a bit hotter, so I’d start checking after 6 minutes.)
- Remove Air Fryer basket and turn wings over (with tongs or a fork so you don’t burn your fingers).
- Put basket back into the Air Fryer and cook until the second side is golden brown and wings have reached 165F/75C in the thickest part. (For us that was 6 minutes on the second side, but other Air Fryer models might take a bit more or less time.)
- While the wings cook, make the Whipped Feta Dip with Sumac (or other dip or sauce of your choice).
- Serve the Greek Wings hot, with plenty of napkins!
Notes
- Some grocery store wings may need trimming of excess skin and fat.
