Description
A quick and flavorful ramen stir-fry with ground beef and fresh vegetables.
Ingredients

- 1 lb ground beef (can sub ground turkey)
- 2 packs ramen noodles (discard seasoning packets)
- 1 tbsp ghee or oil
- 3 cloves garlic (minced)
- 1 tsp grated ginger (optional but so good)
- 1 cup shredded cabbage or coleslaw mix
- 2 green onions (sliced)
- 1 tbsp sesame seeds (optional)
- ΒΌ cup soy sauce or coconut aminos
- 2 tbsp hoisin
- 1 tbsp rice vinegar
- 1 tbsp white miso paste
- 1 tbsp maple syrup or brown sugar
- 1 tsp sriracha or chili crisp (optional for heat)
Instructions
- Cook the ramen: Bring a pot of water to a boil, add ramen bricks, and cook for 2β3 minutes until just softened. Drain and set aside.
- Brown the beef: In a large skillet, heat ghee. Add ground beef, breaking it apart. Season lightly with salt + pepper. Cook until browned.
- Add aromatics & veggies: Stir in garlic and ginger, cooking 1 min. Add cabbage and cook until slightly wilted.
- Make it saucy: Pour in all sauce ingredients. Simmer 1β2 minutes to thicken slightly.
- Toss it together: Add cooked ramen into the skillet and toss until the noodles are glossy and coated. Fold in green onions.
- Finish: Top with sesame seeds, extra chili crisp, or more green onions.
Notes
- Feel free to customize the vegetables based on your preference.
- Using ground turkey instead of beef will yield a lighter dish.
