Description

A quick and flavorful ramen stir-fry with ground beef and fresh vegetables.


Ingredients

Scale
  • 1 lb ground beef (can sub ground turkey)
  • 2 packs ramen noodles (discard seasoning packets)
  • 1 tbsp ghee or oil
  • 3 cloves garlic (minced)
  • 1 tsp grated ginger (optional but so good)
  • 1 cup shredded cabbage or coleslaw mix
  • 2 green onions (sliced)
  • 1 tbsp sesame seeds (optional)
  • ΒΌ cup soy sauce or coconut aminos
  • 2 tbsp hoisin
  • 1 tbsp rice vinegar
  • 1 tbsp white miso paste
  • 1 tbsp maple syrup or brown sugar
  • 1 tsp sriracha or chili crisp (optional for heat)

Instructions

  1. Cook the ramen: Bring a pot of water to a boil, add ramen bricks, and cook for 2–3 minutes until just softened. Drain and set aside.
  2. Brown the beef: In a large skillet, heat ghee. Add ground beef, breaking it apart. Season lightly with salt + pepper. Cook until browned.
  3. Add aromatics & veggies: Stir in garlic and ginger, cooking 1 min. Add cabbage and cook until slightly wilted.
  4. Make it saucy: Pour in all sauce ingredients. Simmer 1–2 minutes to thicken slightly.
  5. Toss it together: Add cooked ramen into the skillet and toss until the noodles are glossy and coated. Fold in green onions.
  6. Finish: Top with sesame seeds, extra chili crisp, or more green onions.

Notes

  • Feel free to customize the vegetables based on your preference.
  • Using ground turkey instead of beef will yield a lighter dish.
