- 2 cups cooked shredded chicken
- 3 cups cooked white rice
- 3 cups broccoli florets
- 1 can cream of chicken soup (10 ounces)
- 1 cup milk
- 1 cup sour cream
- 3 tablespoons unsalted butter, melted
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 cups shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese (optional)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons chopped fresh parsley (optional for garnish)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with butter or cooking spray.
- Prepare the broccoli by chopping fresh florets into bite sized pieces or thawing frozen broccoli and patting it dry with paper towels.
- In a large mixing bowl whisk together the cream of chicken soup, milk, sour cream, melted butter, minced garlic, salt, pepper, and paprika until smooth.
- Stir in the finely diced onion until it is evenly distributed through the creamy sauce.
- Fold the cooked shredded chicken, cooked white rice, and prepared broccoli into the sauce and gently stir until everything is well coated.
- Add 1 cup of the shredded cheddar cheese to the mixture and fold it through so there is cheese in every bite.
- Transfer the mixture to the prepared baking dish and spread it into an even layer with a spatula.
- Sprinkle the remaining 1 cup of cheddar cheese and the shredded mozzarella cheese evenly over the top of the casserole.
- Bake for 30 to 35 minutes or until the casserole is hot in the center, the edges are bubbling, and the cheese on top is melted and lightly golden.
- Remove the casserole from the oven and let it rest for 5 to 10 minutes so it can set slightly and is easier to scoop.
- Garnish with chopped fresh parsley if using, then serve warm.
Notes
- This casserole can be made ahead of time and refrigerated before baking.
- You can substitute cooked turkey for the chicken or use different vegetables as desired.
