Description

A comforting chicken broccoli rice casserole that combines several delicious ingredients for a perfect family meal.


Ingredients

  • 2 cups cooked shredded chicken
  • 3 cups cooked white rice
  • 3 cups broccoli florets
  • 1 can cream of chicken soup (10 ounces)
  • 1 cup milk
  • 1 cup sour cream
  • 3 tablespoons unsalted butter, melted
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese (optional)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with butter or cooking spray.
  2. Prepare the broccoli by chopping fresh florets into bite sized pieces or thawing frozen broccoli and patting it dry with paper towels.
  3. In a large mixing bowl whisk together the cream of chicken soup, milk, sour cream, melted butter, minced garlic, salt, pepper, and paprika until smooth.
  4. Stir in the finely diced onion until it is evenly distributed through the creamy sauce.
  5. Fold the cooked shredded chicken, cooked white rice, and prepared broccoli into the sauce and gently stir until everything is well coated.
  6. Add 1 cup of the shredded cheddar cheese to the mixture and fold it through so there is cheese in every bite.
  7. Transfer the mixture to the prepared baking dish and spread it into an even layer with a spatula.
  8. Sprinkle the remaining 1 cup of cheddar cheese and the shredded mozzarella cheese evenly over the top of the casserole.
  9. Bake for 30 to 35 minutes or until the casserole is hot in the center, the edges are bubbling, and the cheese on top is melted and lightly golden.
  10. Remove the casserole from the oven and let it rest for 5 to 10 minutes so it can set slightly and is easier to scoop.
  11. Garnish with chopped fresh parsley if using, then serve warm.

Notes

  • This casserole can be made ahead of time and refrigerated before baking.
  • You can substitute cooked turkey for the chicken or use different vegetables as desired.
