  • 1/4 avocado (sliced)
  • 1 teaspoon olive oil
  • 1/8 teaspoon red pepper flakes
  • 1/4 large heirloom tomato
  • 2 cherry tomatoes (halved)
  • 1/2 teaspoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 slices cucumber
  • 1/8 cup arugula
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 poached egg (or hard boiled/fried/scrambled)
  • 1/4 teaspoon everything but the bagel seasoning
  • 1 teaspoon honey
  • 1/4 peach (thinly sliced)
  • 4 grapes (halved)
  • 1 teaspoon walnuts (crushed)

Instructions

  1. Toast the bread until desired doneness.
  2. Spread the cottage cheese over the toast.
  3. Add toppings of choice and serve immediately.
