- 1 cup unsalted butter, melted and slightly cooled
- 1 1/4 cups light brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon orange zest (optional)
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup white chocolate chips
- 3/4 cup dried cranberries
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract (for frosting)
- 1/3 cup dried cranberries, chopped (for topping)
- 1/3 cup white chocolate chips, melted (for drizzle)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- In a large bowl, whisk together the melted butter and brown sugar until smooth and glossy. Add in the eggs, vanilla extract, and orange zest. Stir until well combined.
- Fold in the flour, baking powder, and salt. Be careful not to overmix—just stir until no dry streaks remain. Gently fold in the white chocolate chips and dried cranberries.
- Spread the batter evenly into your prepared pan. Bake for 18–22 minutes, or until the edges are lightly golden and a toothpick comes out mostly clean. Let the bars cool completely in the pan before frosting.
- Beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Spread the frosting generously over the cooled bars.
- Sprinkle the chopped cranberries over the frosting, then drizzle the melted white chocolate in a zigzag pattern on top. Chill in the fridge for 1 hour to set before slicing into triangles or squares.
