Description

Deliciously moist bars with white chocolate and cranberries.

Ingredients

Scale
  • 1 cup unsalted butter, melted and slightly cooled
  • 1 1/4 cups light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange zest (optional)
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup white chocolate chips
  • 3/4 cup dried cranberries
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/3 cup dried cranberries, chopped (for topping)
  • 1/3 cup white chocolate chips, melted (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  2. In a large bowl, whisk together the melted butter and brown sugar until smooth and glossy. Add in the eggs, vanilla extract, and orange zest. Stir until well combined.
  3. Fold in the flour, baking powder, and salt. Be careful not to overmix—just stir until no dry streaks remain. Gently fold in the white chocolate chips and dried cranberries.
  4. Spread the batter evenly into your prepared pan. Bake for 18–22 minutes, or until the edges are lightly golden and a toothpick comes out mostly clean. Let the bars cool completely in the pan before frosting.
  5. Beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Spread the frosting generously over the cooled bars.
  6. Sprinkle the chopped cranberries over the frosting, then drizzle the melted white chocolate in a zigzag pattern on top. Chill in the fridge for 1 hour to set before slicing into triangles or squares.

Notes

  • Ensure the cream cheese is softened for best mixing results.
  • Bars can be stored in the refrigerator for up to a week.
