- 10 ounces Rotel Tomatoes
- 1 medium Onion (chopped)
- 2 cloves Garlic (minced)
- 1 tablespoon Chili Powder (adjust to spice preference)
- 16 ounces Velveeta Cheese (can substitute with shredded cheddar)
- 8 ounces Cream Cheese (consider light cream cheese for healthier option)

- 1 jalapeño Diced Jalapeños (for extra spice)
- to taste Extra Cheese (for thickness)
Instructions
- In a large skillet, cook the ground beef over medium heat until it’s no longer pink, breaking it apart with a spatula. This should take about 5-7 minutes.
- Drain any excess grease from the skillet, then add the chopped onion and minced garlic. Sauté the mixture until the onion is softened and translucent, around 3-4 minutes.
- Stir in the Rotel tomatoes along with the chili powder. Allow the mixture to simmer gently for about 3 minutes.
- Add the Velveeta cheese cubes to the skillet, stirring consistently until the cheese has melted into a smooth, creamy consistency.
- Mix in the cream cheese until fully incorporated.
- Sprinkle salt and pepper to taste, then transfer the dip to your favorite serving bowl. Serve warm with tortilla chips.
