  • 10 ounces Rotel Tomatoes
  • 1 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Chili Powder (adjust to spice preference)
  • 16 ounces Velveeta Cheese (can substitute with shredded cheddar)
  • 8 ounces Cream Cheese (consider light cream cheese for healthier option)
  • to taste Salt
  • to taste Pepper
  • 1 jalapeño Diced Jalapeños (for extra spice)
  • to taste Extra Cheese (for thickness)

Instructions

  1. In a large skillet, cook the ground beef over medium heat until it’s no longer pink, breaking it apart with a spatula. This should take about 5-7 minutes.
  2. Drain any excess grease from the skillet, then add the chopped onion and minced garlic. Sauté the mixture until the onion is softened and translucent, around 3-4 minutes.
  3. Stir in the Rotel tomatoes along with the chili powder. Allow the mixture to simmer gently for about 3 minutes.
  4. Add the Velveeta cheese cubes to the skillet, stirring consistently until the cheese has melted into a smooth, creamy consistency.
  5. Mix in the cream cheese until fully incorporated.
  6. Sprinkle salt and pepper to taste, then transfer the dip to your favorite serving bowl. Serve warm with tortilla chips.
