Description
A delicious beef tips and gravy recipe, perfect for serving over mashed potatoes, rice, or egg noodles. Slow-cooked until fork-tender!

- 2 Tablespoons butter (can use salted or unsalted)
- 2 pounds beef stew meat (cut up any really large pieces)
- 1 small yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 packet brown gravy mix (low sodium if possible)
- 1 packet onion soup mix (low sodium if possible)
- 1 cup Coca Cola
- 1 cup low or no sodium beef broth
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt and black pepper (optional, to taste)
- dried or fresh parsley (for garnish, optional)
- 1 Tablespoon cornstarch
- 2 Tablespoons water
Instructions
- In a large skillet, over medium-high heat, melt 2 Tablespoons butter.
- Add 2 pounds beef stew meat in batches and sear until browned on all sides, about 3–4 minutes per batch. If necessary, add more butter (or oil) if needed. We’re not cooking them all the way through, just giving them some color.
- Once browned, add the beef to a 5-6 quart crock pot.
- Place 1 small yellow onion, thinly sliced and 2 cloves garlic, minced on top of the beef.
- In a medium bowl or large measuring cup, whisk together 1 packet brown gravy mix, 1 packet onion soup mix, 1 cup Coca Cola, 1 cup low or no sodium beef broth, 1 Tablespoon Worcestershire sauce, 1 teaspoon onion powder and 1 teaspoon garlic powder until smooth. Stir carefully as the soda will fizz up as it is stirred.
- Pour the soda mixture evenly over the beef and onions in the slow cooker. Give it all a gentle stir to combine.
- Cover and cook on LOW for 7–8 hours or HIGH for 4 hours, until beef is fork-tender. Do not remove the lid and check on the meat while cooking. This can result in the meat taking longer to cook and coming out tough. Just set it and forget it.
- To thicken the sauce (this is optional but I prefer to do it.), in a small bowl, whisk together 1 Tablespoon cornstarch with 2 Tablespoons water until smooth. Stir into the slow cooker. Turn the heat to HIGH and cook for an additional 15 minutes until thickened. Taste to see if any additional salt and black pepper is needed to your taste.
- Garnish with dried or fresh parsley, if desired. Serve beef tips and gravy over mashed potatoes, rice, or egg noodles.
Notes
- Cut up any really large pieces of beef stew meat before cooking.
- Low sodium versions of gravy and soup mixes are recommended for a healthier dish.
