Instructions
- Prepare the oven and pans: Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
- Mix the dry ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- Combine the wet ingredients: In another bowl, whisk the eggs, vegetable oil, buttermilk, blackberry puree, and vanilla extract.
- Create the batter: Slowly add the wet ingredients into the dry mixture, stirring gently until combined. Pour in the hot water and mix until the batter is smooth and slightly thin.
- Bake the cake: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted comes out clean.
- Cool the cakes: Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack.
- Make the ganache: Heat the heavy cream until warm but not boiling. Pour it over the chocolate chips in a bowl and let sit for one minute. Stir until smooth, then add butter for extra shine.
- Assemble the cake: Place one cake layer on a serving plate, pour a thin layer of ganache over the top, add the second layer, and pour the remaining ganache over the cake.

- Allow the cakes to cool completely before adding the ganache for best results.
