Description

Instructions

  1. Prepare the oven and pans: Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. Combine the wet ingredients: In another bowl, whisk the eggs, vegetable oil, buttermilk, blackberry puree, and vanilla extract.
  4. Create the batter: Slowly add the wet ingredients into the dry mixture, stirring gently until combined. Pour in the hot water and mix until the batter is smooth and slightly thin.
  5. Bake the cake: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  6. Cool the cakes: Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack.
  7. Make the ganache: Heat the heavy cream until warm but not boiling. Pour it over the chocolate chips in a bowl and let sit for one minute. Stir until smooth, then add butter for extra shine.
  8. Assemble the cake: Place one cake layer on a serving plate, pour a thin layer of ganache over the top, add the second layer, and pour the remaining ganache over the cake.
