Description

A delicious and creamy cashew cheese that is perfect for serving with crackers or fresh veggies.


Ingredients

  • 1 ½ cups raw cashews (soaked overnight or quick-soaked for 30 min in boiling water)
  • ½ cup fresh filtered water
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon apple cider vinegar (ACV)
  • ½ teaspoon sea salt (or to taste)
  • ¼ teaspoon onion powder
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon black pepper

Instructions

  1. Prep Cashews: If not pre-soaked, place the cashews in a heat-proof bowl and cover with boiling water. Let soak for 30 minutes, then drain and rinse thoroughly.
  2. Blend Base: Combine the soaked cashews, filtered water, nutritional yeast, lemon juice, ACV, salt, and onion powder in a high-speed blender or food processor. Blend until completely smooth and creamy, scraping down the sides as needed. This should take 1–3 minutes, depending on your blender.
  3. Chill for Texture: Transfer the cashew mixture to a medium bowl. Cover and refrigerate for at least 3 hours (180 minutes), or preferably overnight, to allow the mixture to firm up into a cheese consistency.
  4. Mix in Herbs: Once chilled, gently fold in the minced garlic, chopped chives, parsley, thyme, and black pepper. Taste and adjust seasonings as needed. If it’s too thick, you can add 1 teaspoon of water or lemon juice to reach your desired texture.
  5. Serve: Serve immediately with crackers, fresh veggies, or crusty bread. Store leftovers in an airtight container in the fridge.
