Spiced Cookies with Vanilla Melting Wafers

Description

Delicious spiced cookies topped with melted vanilla wafers and sprinkles.


Ingredients

Scale
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cloves
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground black pepper (optional)
  • 1 cup granulated sugar
  • ¾ cup unsalted butter softened (or shortening)
  • ¼ cup molasses
  • 1 large egg at room temperature
  • 1 cup vanilla melting wafers
  • Wilton Holly Mix Sprinkles

Instructions

  1. Preheat the oven to 350°F/180°C, and line 2 cookie sheets with parchment paper or Silpat silicone mats.
  2. In a large mixing bowl, combine the flour with baking soda, salt, cloves, ginger, and cinnamon. Set aside.
  3. In the mixing bowl of a stand mixer, add butter, sugar, eggs, and molasses, and mix until smooth and creamy.
  4. Add the dry ingredients to the wet ingredients, and mix until a smooth dough has formed.
  5. Using a small cookie scoop, scoop the dough and roll into balls then roll in sugar. Place on the prepared cookie sheets, and bake for 12 minutes or until the edges start to brown.
  6. Remove from the oven, allow to cool on the cookie sheet for 5 minutes then transfer to a wire rack to cool completely.
  7. In a small bowl, melt the vanilla melting wafers in the microwave in 30 second increments stirring in between until completely melted.
  8. Dip ¼ of each cookie, and place on a wire rack. Decorate with sprinkles immediately and allow to set and harden.
  9. Serve with a glass of milk!

  • These cookies are best served fresh but can be stored in an airtight container for up to a week.
