Ingredients

  • 3 cups potatoes (chopped)
  • 1 cup ham (diced)
  • 2 cups carrots (sliced)
  • 2 cups celery (diced)
  • 6 cups chicken broth (low sodium recommended)

Instructions

  1. In a large pot, sauté the diced onion over medium heat until translucent, about 5 minutes.
  2. Stir in the sliced carrots and diced celery; cook until softened, about 5-7 minutes.
  3. Add the chopped potatoes and diced ham, then pour in the chicken broth and bring to a boil.
  4. Let it simmer for 20 minutes or until the potatoes are tender.
  5. Stir in the heavy cream just before serving.
