Description

A delicious grilled chicken recipe served with sweet corn and jasmine rice, topped with a creamy lime sauce.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 cups fresh sweet corn kernels
  • 1 cup cooked jasmine rice
  • 2 tbsp mayonnaise
  • Juice of 1 lime
  • 1 tsp chili powder
  • ½ cup fresh cilantro (optional)
  • ½ cup sour cream
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet over medium-high heat.
  2. Season chicken breasts with salt, pepper, and chili powder. Grill for about 6-7 minutes per side until internal temperature reaches 165°F.
  3. Cook rice according to package instructions while chicken is grilling.
  4. Shuck corn and sauté in a pan over medium heat for about 5 minutes until slightly charred.
  5. Slice grilled chicken into bite-sized pieces.
  6. In serving bowls, layer rice, top with chicken and sautéed corn.
  7. Drizzle sauce made from sour cream and lime juice over the top and garnish with cilantro if desired.

Notes

  • For additional flavor, marinate the chicken in lime juice and chili powder for an hour before cooking.
