Description

A hearty chicken soup with spinach and fresh flavors, perfect for any day of the week.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion
  • 2 carrots
  • 2 celery stalks
  • 3 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup fresh spinach
  • Juice and zest of 1 large lemon
  • Fresh parsley for garnish

Instructions

  1. Sauté the chicken in olive oil until browned (5-7 minutes). Remove and set aside.
  2. Cook onions, carrots, and celery in the same pot for about 5 minutes. Add garlic and sauté for another 30 seconds.
  3. Return the chicken to the pot, pour in broth, add thyme and oregano. Bring to boil, then simmer for 15-20 minutes.
  4. Stir in spinach along with lemon juice and zest. Cook for additional 2-3 minutes.
  5. Adjust seasoning with salt and pepper before serving hot, garnished with parsley.

Notes

  • For creamier soup, add a splash of cream before serving.
  • This soup can be stored in the refrigerator for up to 3 days.
