Corned Beef and Sauerkraut Sliders

Description

Delicious sliders made with corned beef, sauerkraut, and Swiss cheese, perfect for any gathering!


Ingredients

  • 14 ounces canned sauerkraut (drained and squeezed dry)
  • 2 tablespoons Russian dressing or Thousand Island (plus more for dipping)
  • 1/2 teaspoon caraway seeds (optional)
  • 12 Hawaiian rolls
  • 8 slices Swiss cheese
  • 1/2 pound deli corned beef (thinly sliced)
  • 1/2 cup unsalted butter (melted)
  • 1 1/2 tablespoons dried onion soup mix
  • 1/2 teaspoon poppy seeds
  • fresh chopped parsley (for garnish, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Drain the sauerkraut well and squeeze it dry with a clean kitchen towel or paper towels. You want to get as much liquid out of the sauerkraut as possible to prevent soggy sliders.
  3. Place the sauerkraut in a medium-sized bowl and mix it with the Russian dressing and caraway seeds if using, set aside.
  4. Cut the Hawaiian rolls in half horizontally so you have tops and bottoms. Try to keep the rolls connected to each other for easier assembly.
  5. Place the bottom portion of the rolls, cut side up, into an 11×7 baking dish.
  6. Add 4 slices of the Swiss cheese on top of the rolls, covering the entire surface.
  7. Add the corned beef, distributing it evenly over the cheese layer.
  8. Spread the sauerkraut mixture evenly over the corned beef.
  9. Add another 4 slices of cheese on top of the sauerkraut, then place the tops of the rolls on top of the filling.
  10. In a small bowl, stir together the melted butter, onion soup mix, and poppy seeds until well combined.
  11. Brush the butter mixture on top of the rolls, making sure to use it all.
  12. Cover with nonstick foil or spray regular foil with cooking spray to prevent sticking to the tops of the rolls.
  13. Bake covered for 25 minutes, then remove the foil and bake an additional 5 minutes until the tops are toasted and beautifully browned.
  14. Cut into individual sliders, garnish with optional fresh parsley if desired, and serve with extra Russian or Thousand Island dressing for dipping.

Notes

  • For a spicier version, consider adding sliced jalapeños.
  • Serve with a side of pickles for a complete meal.
