Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 cups vegetable or chicken broth
  • ¼ cup fresh parsley, chopped
  • Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot, bring salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant, taking care not to burn it.
  4. Pour in the chicken or vegetable broth, lemon juice, and zest. Allow to simmer for 3-5 minutes, letting the flavors meld together.
  5. Add the cooked orzo and shrimp back into the skillet, stirring until everything is well combined. Heat through.
  6. Remove from heat and fold in fresh parsley. Adjust seasoning if necessary.
  7. Serve immediately, topped with freshly grated Parmesan cheese, if desired.
