Description
A delicious shrimp orzo dish with garlic, lemon, and fresh parsley.

- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 2 cups vegetable or chicken broth
- ¼ cup fresh parsley, chopped
- Parmesan cheese, for serving (optional)
Instructions
- In a large pot, bring salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant, taking care not to burn it.
- Pour in the chicken or vegetable broth, lemon juice, and zest. Allow to simmer for 3-5 minutes, letting the flavors meld together.
- Add the cooked orzo and shrimp back into the skillet, stirring until everything is well combined. Heat through.
- Remove from heat and fold in fresh parsley. Adjust seasoning if necessary.
- Serve immediately, topped with freshly grated Parmesan cheese, if desired.
Notes
- For a spicier dish, adjust the amount of red pepper flakes to your liking.
- Fresh herbs make a significant difference in flavor, so use fresh parsley if possible.
