Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

  • 3/4 cup sparkling sugar (for rolling)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until well combined. Set aside.
  3. In a large mixing bowl, beat the softened butter with the white sugar until the mixture is fluffy and light in color, approximately 2-3 minutes.
  4. Add the egg, vanilla extract, and almond extract to the butter mixture and continue to beat until thoroughly combined.
  5. Gradually mix in the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix the dough.
  6. Using a cookie scoop or tablespoon, form the dough into balls and roll each ball in the sparkling sugar, ensuring they are coated evenly.
  7. Place the coated dough balls, spaced about 2 inches apart, on the prepared baking sheet.
  8. Gently press down on each cookie ball with the bottom of a glass to flatten slightly.
  9. Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden but the centers are still soft.
  10. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
