- 1 cup unsalted butter, softened

- 1 egg

- 3/4 cup sparkling sugar (for rolling)
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until well combined. Set aside.
- In a large mixing bowl, beat the softened butter with the white sugar until the mixture is fluffy and light in color, approximately 2-3 minutes.
- Add the egg, vanilla extract, and almond extract to the butter mixture and continue to beat until thoroughly combined.
- Gradually mix in the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix the dough.
- Using a cookie scoop or tablespoon, form the dough into balls and roll each ball in the sparkling sugar, ensuring they are coated evenly.
- Place the coated dough balls, spaced about 2 inches apart, on the prepared baking sheet.
- Gently press down on each cookie ball with the bottom of a glass to flatten slightly.
- Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
