Description

Ingredients

Scale
  • 4 cups fresh kale, torn into bite-sized pieces
  • 2 medium sweet potatoes (about 500g), peeled and cubed
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced almonds or pumpkin seeds

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato cubes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
  3. Roast sweet potatoes for 25-30 minutes until golden brown, stirring halfway through for even cooking.
  4. In a large bowl, drizzle remaining olive oil over the kale; massage leaves until wilted.
  5. Combine roasted sweet potatoes with massaged kale and add sliced almonds or pumpkin seeds for crunch.
  6. Serve warm, drizzled with additional olive oil or dressing if desired.
