- 4 cups fresh kale, torn into bite-sized pieces
- 2 medium sweet potatoes (about 500g), peeled and cubed
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup sliced almonds or pumpkin seeds
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, toss sweet potato cubes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
- Roast sweet potatoes for 25-30 minutes until golden brown, stirring halfway through for even cooking.
- In a large bowl, drizzle remaining olive oil over the kale; massage leaves until wilted.
- Combine roasted sweet potatoes with massaged kale and add sliced almonds or pumpkin seeds for crunch.
- Serve warm, drizzled with additional olive oil or dressing if desired.
