Ingredients

- 12 ounces rotini pasta
- 3/4 cup mayonnaise
- 1/2 cup sour cream
- 3 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 1 garlic clove, minced
- 1/2 cup grated Parmesan cheese
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil and cook the rotini until al dente.
- Drain the pasta, rinse it under cold water, and let it cool completely.
- In a large mixing bowl, whisk together the mayonnaise, sour cream, lemon juice, lemon zest, garlic, Parmesan, salt, and black pepper until smooth.
- Add the cooled pasta, cucumber, cherry tomatoes, red onion, dill, and parsley to the bowl.
- Toss everything gently until the pasta is evenly coated in the creamy lemon dressing.
- Cover and chill for at least 30 minutes before serving, then stir and serve cold.

- This pasta salad is great for picnics and potlucks.
