Roasted Salmon with Brussels Sprouts

Description

A delicious and healthy recipe for roasted salmon paired with crispy Brussels sprouts.


Ingredients

Scale
  • 4 salmon fillets (6 oz each)
  • 1 lb Brussels sprouts, trimmed and halved
  • 4 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Toss Brussels sprouts in a bowl with 2 tablespoons of olive oil, salt, pepper, and minced garlic. Spread on one side of the baking sheet.
  4. Place salmon fillets on the other side of the baking sheet. Drizzle with remaining olive oil and lemon juice; season with salt and pepper.
  5. Roast for 15-20 minutes until salmon flakes easily and Brussels sprouts are crispy.
  6. Serve immediately, drizzling any pan juices over the salmon.

Notes

  • For an extra flavor boost, marinate the salmon in the olive oil and lemon juice for 30 minutes before cooking.
  • This recipe can easily be doubled for larger gatherings.
