A delicious and healthy recipe for roasted salmon paired with crispy Brussels sprouts.
Ingredients

- 4 salmon fillets (6 oz each)
- 1 lb Brussels sprouts, trimmed and halved
- 4 cloves fresh garlic, minced
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Toss Brussels sprouts in a bowl with 2 tablespoons of olive oil, salt, pepper, and minced garlic. Spread on one side of the baking sheet.
- Place salmon fillets on the other side of the baking sheet. Drizzle with remaining olive oil and lemon juice; season with salt and pepper.
- Roast for 15-20 minutes until salmon flakes easily and Brussels sprouts are crispy.
- Serve immediately, drizzling any pan juices over the salmon.
Notes
- For an extra flavor boost, marinate the salmon in the olive oil and lemon juice for 30 minutes before cooking.
- This recipe can easily be doubled for larger gatherings.
